In recent decades, interest in spices with biological activity has grown in the field of nutrition and public health. Cardamom as an antioxidant is presented as one of the most widely studied natural alternatives owing to its richness in essential oils and phenolic compounds. In this article we review, from a scientific and nutritional perspective, which cardamom compounds are involved in antioxidant activity, what experimental evidence is available, its possible implications for health, and how these findings can relate to the production, quality and market of cardamom in Colombia.

1. What is cardamom and why is it of interest for health?

Cardamom (cardamom spice) is the aromatic capsule containing seeds packed with essential oils and bioactive compounds. In addition to its traditional culinary use, it has been studied for its pharmacological and nutraceutical properties. Technical documents on cultivation and uses mention that cardamom concentrates volatile oils such as terpineol, 1,8-cineole, sabinene, limonene and pinene, as well as phenolic components that act as antioxidants, which underpins its potential in nutrition and health.

2. Phytochemical composition related to antioxidant activity

Cardamom's antioxidant capacity is largely determined by its chemical composition. The relevant components include:

Essential oils: a mixture of monoterpenes and oxygenated monoterpenes (for example, 1,8-cineole, terpineol, sabinene, limonene, pinene) that provide redox properties and contribute to the characteristic aroma.

Phenolic compounds and flavonoids: responsible for antioxidant activity in numerous in vitro studies; these compounds can donate electrons or hydrogens to neutralise free radicals.

Other secondary metabolites: trace amounts of tannins and organic acids whose presence also modulates antioxidant activity and the chelating capacity of certain metal ions.

These chemical profiles vary with species, geographic origin, harvest method and processing (for example, drying and storage). In the Colombian context, the presence of these oils and compounds has been documented in technical papers on the chemical properties and uses of cardamom.

3. Mechanisms by which cardamom acts as an antioxidant

From a biochemical standpoint, the antioxidant mechanisms associated with cardamom include:

Direct neutralisation of free radicals: certain monoterpenes and phenols can donate electrons or hydrogens to stabilise reactive radicals.

Inhibition of lipid peroxidation reactions: phenolic compounds reduce the formation of peroxides on cellular lipids under oxidative conditions.

Metal-chelating activity: some phenols can chelate catalytic ions (for example, iron) and reduce the generation of reactive species through Fenton reactions.

Modulation of enzymatic systems: in experimental models it has been observed that spice extracts in general can influence the activity of endogenous antioxidant enzymes (such as superoxide dismutase, catalase and glutathione peroxidase), although the magnitude and consistency of these effects depend on dose and study matrix.

It is important to stress that most of the mechanisms described come from laboratory (in vitro) studies and animal models; evidence in humans requires further controlled clinical trials. Nonetheless, the presence of the aforementioned compounds in cardamom plausibly supports its antioxidant action.

4. Scientific evidence: what do the studies say?

The scientific literature on cardamom includes studies evaluating the antioxidant activity of extracts and fractions (for example, through assays such as DPPH, ABTS, FRAP) and preclinical studies exploring effects in animal models subjected to oxidative stress. In general terms:

In vitro chemical assays show that cardamom extracts have the capacity to capture radicals and reduce oxidising agents under experimental conditions.

In animal models, some studies report that administration of cardamom extracts can decrease biomarkers of oxidative stress in tissues and biological fluids.

Research in humans is still limited and heterogeneous; for this reason, the scientific community recommends caution when extrapolating experimental results to conclusive clinical effects.

This pattern of evidence —robust in laboratory trials, promising in animal models and still incipient in humans— is common in the study of many spices with biological activity. For this reason, well-designed clinical studies are encouraged to define dosage, safety and efficacy in specific populations.

5. Implications for public health and clinical practice

From the health sector's perspective, considering cardamom as an antioxidant opens up several lines of interest:

Nutritional prevention: adding cardamom to the diet can help increase the intake of antioxidant compounds from food and spices, as part of a balanced diet rich in fruits, vegetables and whole foods.

Dietary supplementation and functionality: food formulations and functional ingredients that incorporate cardamom can leverage its sensory and phytochemical profile, provided that quality controls and safety assessment are in place.

Clinical research: the health sector and scientific community can design studies that assess specific effects (e.g. markers of oxidative stress, inflammation or lipid profiles) in relation to controlled consumption of cardamom or its extracts.

In all scenarios, vigilance regarding potential pharmacological interactions and safety assessment in vulnerable populations (pregnant women, patients with chronic conditions, and those on concomitant drug treatments) is essential.

6. Applications in the food and nutraceutical industry

The use of cardamom as an antioxidant in the Colombian food industry can be twofold: on the one hand, as a natural preservative that helps protect products against oxidation; on the other, as a functional ingredient that provides sensory and nutraceutical value. Some points to consider:

Formulation: the stability of antioxidant compounds during thermal processing, storage and in complex matrices must be assessed.

Regulation and labelling: any functional claim on food products must be supported by evidence and comply with local and international regulations.

Raw material quality: industrial and nutraceutical uses require high-quality cardamom —green cardamom with high essential oil content and free of contaminants—; this determines suitability for cardamom suppliers in Colombia seeking international markets.

7. Quality, value chain and market in Colombia

For cardamom to consistently provide antioxidant properties in food and supplements, quality must be guaranteed from production through to export. Technical documents on the sector in the region address aspects of marketing and sales, chemical characteristics and quality criteria, which is key for the cardamom value chain in Colombia and Latin America.

Some aspects relevant to stakeholders in the health and industry sectors:

Identifying high-quality cardamom for export from Colombia: priority is given to green cardamom, with preserved aroma and essential oil profile; proper post-harvest practices reduce losses and preserve volatile compounds.

Quality requirements for exporting Colombian cardamom: processing, drying and storage processes must meet safety standards and market specifications; establishment and maintenance costs of the crop also influence the product's competitiveness.

The cardamom market in Latin America and globally: demand for cardamom (including green cardamom) continues in markets that value quality and traceability; the local value chain can support value-added products aimed at the food and nutraceutical industry.

8. Production and agricultural practices (summary for the health and business sector)

Although this article focuses on science and nutrition, it is useful for readers in the health sector and business community to be aware of operational aspects that influence input quality:

Cardamom thrives in conditions of humidity and shade, with specific rainfall and temperature requirements that condition the spice's chemical profile. The technical guide and cultivation manuals describe these requirements and recommended practices for preserving quality.

Management practices, plant material selection and post-harvest processes (drying, storage) directly affect the content of essential oils and phenolic compounds responsible for antioxidant activity; this is why traceability and quality controls are a priority.

The costs of establishing and maintaining a hectare of cardamom, as well as the organisation of the value chain, condition the supply of quality cardamom for industry. Cost and production budget information is useful for planning commercial projects.

Note: the technical cultivation details presented here are based on available sectoral documentation and should be discussed with agronomic and technical advisors for specific production decisions.

9. How to incorporate cardamom into clinical and dietary practice

For health professionals wishing to guide patients or consumers:

Recommending the inclusion of cardamom as part of a varied diet rich in natural antioxidants (fruits, vegetables, legumes) may be reasonable, while making clear that it does not replace medical treatments or supplements when these are indicated.

For people on chronic medication, it is prudent to assess possible interactions (pharmacological consultation) before recommending concentrated doses or supplements based on cardamom extracts.

Promoting culinary use (infusions, seasoning in dishes and beverages) as a source of bioactive compounds and flavour, facilitating dietary adherence without significant risk when consumed as a spice in usual food quantities.

10. Future lines of research and recommendations

To consolidate the role of cardamom as an antioxidant, it is necessary to advance translational research:

Controlled clinical trials assessing relevant endpoints (markers of oxidative stress, inflammation, metabolic parameters) in well-characterised populations.

Studies on the stability and bioaccessibility of cardamom's antioxidant compounds in food matrices and during industrial processing.

Analysis of chemical variation according to geographic origin, cultivation and post-harvest practices, to identify batches and cardamom suppliers in Colombia with better phytochemical profiles.

11. Practical recommendations for health professionals and companies

When suggesting the use of cardamom in therapeutic diets, emphasise that it forms part of an overall healthy dietary pattern and that specific clinical evidence is still incipient.

If your organisation plans to develop functional products, prioritise the selection of high-quality cardamom (oil profile, absence of contaminants) and validate the stability of antioxidant activity in the final formulation.

Encourage partnerships with Colombian suppliers and producers that have demonstrable post-harvest practices and traceability; this favours ingredient consistency.

12. Conclusion

Cardamom combines essential oils and phenolic compounds that give it antioxidant capacity in experimental trials; for this reason, considering cardamom as an antioxidant has phytochemical backing and preclinical evidence. For the health sector and the food industry in Colombia, this represents an opportunity to integrate this spice into nutritional strategies and product development, always with criteria of quality, safety and clinical evidence. Furthermore, the quality of the raw material and the value chain in Colombia are determining factors in maximising cardamom's functional potential in commercial applications.
